After being sick the last couple of days it reminded me to be more prepared with a few freezer meals in my freezer so I thought I would share a VERY EASY way to add a few meals for those emergencies or busy weeknights! All of these recipes are made with boneless chicken breasts and will take less than an hour to prepare!

We eat a lot of chicken since I buy it in bulkwhich is SO much cheaper. The following are main dishes made with boneless skinless chicken breasts. You could buy a couple of packages of frozen chicken at your local grocery store on sale and make these dishes for future use.

One added hint..These can also be made in a crock-pot, except the Parmesan Chicken and Chicken Salad.

Meal planning is a huge help whether you get sick, work outside or inside the home. Life is busy, so with a minimum amount of work you too can have a quick easy main dish to put into your oven with no work at all!

One of the things that you really need are 9 x 13 Foil pans. Here is the secret to NOT cooking in foil (that is unless you don’t mind) ~
When you take a meal out of the freezer to cook, simply dip the outside of the pan in hot water and slide the frozen meal into a 9 x 13 glass pan and cook! Yep!! It’s that easy!

If you don’t already have 9 x 13 glass Pyrex baking dishes you need a couple. There are also ones with lids for easy storage for leftovers! A must have for freezer cooking!

Baking instructions for all meals: Thaw completely. Bake at 350 degrees for one hour. Use as many chicken breasts as your family will normally eat at a meal.

Chicken Surprise

Take boneless, skinless chicken (still frozen), put into a 9×13 pan (aluminum is great for freezing) cover with a few strips of bacon, sliced mushrooms, and 1 can of cream of chicken soup. Press 4 cloves of garlic into the soup first and stir. Cover and freeze until ready to use.

Unthaw, Bake, Top with freshly grated Parmesan cheese and serve on curly or bow tie pasta..or whatever kind you wantEasy Boneless Chicken Breast Recipes for the Freezer (6)

Mexican Chicken

Take boneless, skinless chicken breasts put in 9×13 pan and top with finely chopped onion, sprinkle with 4 cloves of minced garlic. Put a “finger” of cheese on each piece. Cover with medium or mild salsa.

Unthaw, Bake, Serve with Mexican rice. (easy Mexican rice..any kind of rice with some taco seasoning mixed in..tomato’s if fam likes:)

Parmesan Chicken

Take boneless, skinless chicken. Dip in egg or milk.. Dredge (dip) in an equal mixture of Italian bread crumbs and freshly grated Parmesan cheese. (Add a little lemon zest and a few cloves of garlic to bread crumb mixture for extra incredible flavor). Put in 9×13 pan and freeze.

Unthaw, Bake, Serve with pasta and tomato sauce side dish

Teriyaki Chicken

Take frozen , boneless, skinless chicken and put into freezer bag. Add Yoshida’s Gourmet Teriyaki Sauce(this is oooh so YUM!), a small splash of vinegar, 4 cloves of freshly pressed garlic and 1/2 finely minced onion..if you want. Pour over chicken. The chicken will marinate when unthawing. Put in freezer.

Unthaw, Bake. Serve with rice.

Chicken Salad

Poach (boil) Boneless, skinless chicken breasts. Chop chicken and store in baggies for chicken salad, chicken soup, etc.

Chicken salad: Add lite mayo, 1 teas. REAL lemon juice, splash of Worcestershire sauce, chopped walnuts, and coarsely chopped apples or grapes to chicken. I sometimes add Dijon mustard too:) Serve on crusty bread or croissant..or any bread you want!

Chicken soup: Put cooked chicken into a large pot with 1 large can of chicken broth. Add chopped veggies, pasta or rice. Season as desired..I use a little Thyme, Basil, a little pepper..
