Flakey golden and buttery croissants stuffed with chocolate chip cookie dough and topped with more dough, baked until chewy and fudgy. This is a simplified version of the VIRAL recipe from the bakery in Paris.
Sometimes the simplest of recipes have the best outcomes. Also sometimes, viral recipes are not always realistic. This viral recipe is definitely realistic and very delicious. All you need is croissants and cookie dough. They are baked for 10 -12 minutes until chewy, golden, and fudgy. I have used store bought croissants and a simple chocolate chip cookie dough recipe. Before we get to the recipe let us talk a little about it.
What is a Crookie?
A crookie is at the combination of a croissant and cookie dough that is baked together. You could use fresh croissants or a day old will work too, slice them in half, open them up, stuff them with a buttery chocolate chip cookie dough and bake until lightly golden, flakey and just done. Do not over bake these crookies and they should be obey gooey once baked.
Who invented the Crookie?
Turning the clock back to 2022, a bakery in Paris was serving around 100 – 150 of these a day but now they knead out 1500 – 2000 a day. It was created by Stéphane Louvard of Maison Louvard on Rue de Châteaudun, it came about a random Saturday morning after baking up a batch of perfectly laminated croissants and thought of having a little fun with them. However it was only until 2024, where a tiktoker posted about these croissants and the video went which put the Crookie on the map.
What ingredients do you need to make the Crookie?
We need croissants and cookie dough to make this recipe. I have used store bough croissants for this recipe – if you wan to make them at home, by all means go for it but use a good all butter store bought or bakery bought plain croissant and you are sorted. We need cookie dough – I have used my single serve chocolate chip cookie dough recipe but you can use you favorite cookie dough recipe or a store bought cookie dough as well. For the cookie dough we need melted butter (browned butter is better), brown sugar, castor sugar, yogurt, flour, corn flour, baking soda, salt and chocolate chips. I have used a combination of chocolate chips and chunks for puddles of melted chocolate once baked.
What equipment do you need to make the Crookie?
We need a serrated knife/bread knife to slice the croissants. I have made the cookie dough in a mixing bowl with a rubber spatula. The crookies are baked over parchment paper in a tray in the oven.
How to make the Crookie?
We start by preheating the oven to 180℃, line a baking tray with parchment and set aside. In a mixing bowl add the butter, brown & white sugar and stir together until combined. Add the yogurt and mix again. Add the flour, baking soda, salt, chocolate chips, chocolate chunks and stir until combined. Get two large croissants and slice/split them in half with a bread knife. Stuff each cookie with cookie dough and make sure to save some for the top. Transfer the croissants to the baking tray and bake for 10-12 minutes until the cookie dough is just set. Remove from the oven, dust with powdered sugar if you like and serve them hot/warm.
Serving and storing the Crookie?
I prefer serving these hot/warm without the icing sugar but originally they need a light dusting of icing sugar on top. They are delicious with coffee or a glass of milk. Serve them for breakfast, brunch, as a snack or as a dessert. Once they are made you can store them in the air tight containers at room temperate for 2 days or in the fridge for 5 days. When ready to eat warm them in the oven for a couple of minutes until the cookie dough is soft and gooey again. You can also microwave it for 15-30 seconds but they must be consumed immediately or else it will harden.

Ingredients
- 2 large plain croissants
Cookie dough -
- 4 tbsp melted butter
- 4 tbsp brown sugar
- 2 tbsp castor sugar
- 2 tbsp yogurt
- 8 tbsp flour
- 2 tbsp corn flour
- 1/2 tsp baking soda
- Pinch of salt
- 4 tbsp chocolate chips
- 4 tbsp chocolate chunks
Optional -
- Sea salt flakes
- Icing sugar
Instructions
We start by preheating the oven to 180℃, line a baking tray with parchment and set aside.
In a mixing bowl add the butter, brown & white sugar and stir together until combined. Add the yogurt and mix again.
Add the flour, baking soda, salt, chocolate chips, chocolate chunks and stir until combined.
Get two large croissants and slice/split them in half with a bread knife. Stuff each cookie with cookie dough and make sure to save some for the top.
Transfer the croissants to the baking tray and bake for 10-12 minutes until the cookie dough is just set.
Remove from the oven, dust with powdered sugar if you like and serve them hot/warm.
Notes
- Do not over bake these croissants as they are best served gooey.
